5 lean pork chops, all visible fat removed
4 large carrots
2 baby zucchini
8 scallions
8 ounces fresh green beans
16 ounces Kame Lo Mein Noodles
1-inch piece fresh ginger, shredded
1 fresh red chili, sliced
few bok choy leaves, roughly chopped
1 cup bean sprouts
6 T. soy sauce
3 T. Chinese rice wine vinegar
1 t. sugar
4 T. roughly torn fresh cilantro leaves


How Do I Make Lo Mein Noodles with Mixed Vegetables?

Here is how you make Lo Mein Noodles with Mixed Vegetables:

Slice the pork into bite-size pieces. Heat 1 T. oil and stir fry pork until no longer pink. While the pork is cooking cut the carrots and zucchini into fine sticks. Shred the scallions into similar-sized pieces. Trim the beans and cut them into short lengths. When the pork is cooked remove from pan and set aside. Boil the lo mein noodles according to package directions. Drain and set aside. Place 1 T oil in wok - when hot, add the beans and stir-fry for 2-3 minutes. Add the ginger, red chili, carrots and zucchini and stir-fry for 1-2 minutes. Add the bok choy, bean sprouts and scallions. Stir-fry for 1 minute, then add the soy sauce, rice wine vinegar and sugar. Cook, stirring for about 30 seconds. Add the noodles, pork and cilantro and toss to mix.
