29 oz can of crushed tomatoes

Here is how you make Vegetables Piccata:

Thickly slice the vegetables. Put the eggplant slices on a plate, sprinkle with salt and let sit for 15-20 minutes. Beat the egg with approximately 3 tbsp of water. Put bread crumbs in a plate. Spray a pan with cooking spray. Dip vegetable slices in egg wash then bread crumbs and cook until browned and slightly soft.While you are doing that, pour the tomatoes into another sauce pan sprayed with cooking spray. Add tomatoes and season as you wish. Bring to boil, then simmer (I added about 1/4 cup of water to thin tomatoes a bit). As the vegetables cook, place in the tomato sauce and let simmer. Once all vegetables are in, let simmer for 10 minutes.
