Simmer until everything is soft. Dump into blender and mix until saucy. Put back in stock pot and add queso and egg whites. Cook on low heat until thick and stir so thoroughly mixed. Put tortillas on cookie sheet and bake in oven at 350* until crispy, about 7-10 minutes. Put tortillas in bowl and cover with sauce, garnish with lettuce sour cream and avocados.
