Spray 9x13" pan with Pam Cooking Spray. In large mixing bowl add the 5 eggs, oil, and packet of onion soup mix. Stir by hand using large spoon. Stir in the 24 oz container of cottage cheese. Fold in the Special K cereal and mix thoroughly. Pour into 9x13 pan and gently level and press into corners. I like it all smoothed out, but you can leave it bumpy, just be sure you spread it out evenly so it can be baked evenly. Bake 45-55 minutes until golden brown with crispy edges. Remove from oven and cut into 10 pieces with a sharp knife and plate using a spatula. My family enjoys this loaf with baked or mashed potatoes and green beans.
