Whole Wheat Pastry Flour, .5 cup
Mushroom, one very large Portobello, cleaned, trimmed, stem removed
Red Wine, 1 cup
Vegetable Broth, 3 cups
*Potatoes, white, 1.5 lbs, skinned and cut into 1.5" chunks
tomato paste, 2 tbsp (concentrated type in a tube)
Thyme, ground, 2-4 tsp
Rosemary, dried, 2 tsp
Oregano, ground, 2 tsp
Pepper, black, 1 tsp or to taste
sea salt, 1 tsp or to taste
Extra Virgin Olive Oil, 2 tbsp


How Do I Make Vegetarian Faux Pot Roast?

Here is how you make Vegetarian Faux Pot Roast:

Make sure you buy cubed Seitan-3 8oz boxes. Drain the seitan on some paper towels.In a shallow bowl, dredge seitan in a mixture of flour, salt and pepper and shake excess off. Heat 1 tablespoon of oil at medium heat, sautee seitan until it starts to brown. Remove and set aside, including browned bits scraped from pan. In the rest of the olive oil, sautee onions, garlic and mushrooms about 4-7 minutes, when onion starts to become translucent. Add carrots, wine, and spices, and bring to a boil. Cook until liquid is almost completely reduced, about 5 mins. Add broth and potatoes, bring to a boil, then reduce to a simmer for about 15 minutes, until potatoes are fork-tender. Mix 1/2 cup whole wheat pastry flour slowly with 1/2 cup water with a fork, until all is blended. If there are lumps, sift them out with a strainer. Slowly stir into the stew, Add tomato paste and stir in. Let thicken on low heat for 10 minutes. Add seitan and salt and pepper to taste.
