This is a one-pot vegetarian meal that is very satisfying and gives you a lot of fiber and vegetables,as well as carbs for energy and MAJOR FLAVOR. Stir well and turn heat on to medium-high. Once a low boil is achieved, turn heat down until a perfect simmer point is found. Set timer for 6 minutes. While the fettucini is cooking, you are going to add the other ingredients in this order:zuchinnicarrotsgreat northern beansturmericred miso paste (mix this in very well; do not let get to rolling boil)salsaspinach (should be about a minute or so left at this point. Spinach should just be folded in at the end to retain optimal nutrients)fold all ingredients in together, and remove from heat. Enjoy a hearty bowlful and save the rest for later.
