How Do I Make Vegetarian Stroganoff?

Here is how you make Vegetarian Stroganoff:

Cut the broccoli into bite sized pieces and thinly slice the carrot. Steam for 5 minutes then set aside. Meanwhile, saute the butter, leeks, and garlic until softened, about 5 minutes. Stir in the flour and bouillion granules. Add the milk and soy sauce and bring to a boil. Boil for two minutes to let thicken. Add the wine and carrots and broccoli and stir to combine. Mix together the sour cream, cottage cheese and parmesan cheese in a medium sized bowl. Add one cup of the hot veggie mixture to the sour cream mixture and combine, then add all of the sour cream mixture to the veggies and stir. Warm this up until hot, but do not boil.
