one 14 oz can of black beans and diced tomatoes with green chiles.
half a cup each of chopped onion, chopped celery and chopped mushrooms.
two cloves of garlic, diced
five baby carrotts diced
one cup of chopped cabbage.
1 tbsp olive oil
1 tbsp butter

Here is how you make veggie chile:

combine the butter and olive oil in a skillet. Saute the garlic, onion, celery and mushrooms and carrotts till tender/crisp. In a large saucepan combine the beans, tomatoes and cabbage and place over med heat. Put the sauteed veggies into the tomato, bean mix and simmer on low to cook veggies and combine flavors. The "fire" in this chile comes from the diced tomatoes with chiles but you could add some chile powder or other seasoning of your choice. I like fennel and cumin. Some fresh cilantro is good for garnish.
