Here is how you make Joe's Veggie Eggs:

Heat olive oil over medium-high heat in non-stick skillet. Add all zucchini, red pepper, and onion. Saute 8 minutes or so until softened. Scramble eggs in small bowl. Add eggs to skillet, mix to allow uncooked eggs to go to bottom. Allow them to set a minute or two. Loosen and flip over (may break apart). Allow to cook a few more minutes until set.
