1/2 cup red wine or water
1 small onion, chopped
1 large red bell pepper, chopped
10 oz cremini mushrooms, sliced
1/2 cup fresh spinach
1 medium tomato, chopped
1 28 oz can crushed tomatoes with basil
1 tbsp unsweetened apple juice concentrate (or sweetener of choice)
1/4 cup TVP (optional)
salt, pepper, garlic powder, or other Italian seasonings to taste


How Do I Make Georgia's Veggie Marinara?

Here is how you make Georgia's Veggie Marinara:

Heat wine or water in a large non-stick frying pan over medium heat. Add onions and peppers and saute until tender crisp, about 5 minutes. Add mushrooms and continue to saute for 3 more minutes. Add spinach and tomato and saute until spinach is wilted and tomato is starting to break down, about 2 more minutes. Add can of crushed tomatoes and stir until vegetables have been covered. Add apple juice concentrate and stir until melted and incorporated. Let sauce simmer for 5 - 8 minutes, stirring often. Remove from heat and add TVP if using. Let TVP reconstitute for about 3 minutes, then add seasonings to taste. Serve over pasta or any other food you would use chunky tomato sauce on.
