1 lb extra lean ground beef
1/2 cup of chopped red pepper (about 1/2 a pepper)
1/2 cup shredded carrot (about one carrot)
1/2 cup of onion chopped
2 tsp of garlic
1 Large Egg
5 Rtiz crackers, crushed

Glaze:
4 tbsp honey
4 tbsp ketchup
1 tsp hot sauce
1/2 tsp cumin

Here is how you make Veggie-filled Meat Loaf:

Preheat oven to 400 degrees.In a bowl, mix ground beef, red peppers, carrots, onion, garlic, egg and Ritz crackers. It should hold together, but if it's a little crumbly, I add a tsp or two of ketchup. Once thoroughly combined, put in loaf pan. Mix Honey, Ketchup, hot sauce and cumin. Pour over meatloaf.Put in oven for 45 minutes or how ever long it takes for meat to cook through.
