Here is how you make Veggie Mexican Roll Ups:

Preheat oven to 375. Microwave spinach according to package instructions. In a small bowl combined spinach, one container of fat-free ricotta cheese & egg. Microwave tortilla according to package instruction - generally 10 sec per tortilla to soften. Spoon about 1/4 cup of the spinach mixture onto the center of each tortilla. Roll up, and place seam side down in a 9x13 inch baking dish. Pour your favorite salsa over the top, and sprinkle the top with shredded cheddar cheese.
