Here is how you make Whole Wheat crepes with ham filling:

To make the crepes mix together flour, oats, and salt. Then lightly beat eggs together with milk. Add to flour mixture and whisk together until no trace of flour remains. Scrape the side of the bowl carefully if using a mixer. Let stand for 10 min.Heat griddle to 300 degrees (med high). Using cooking spray on griddle. Pour about one third of the batter on to the griddle. Tilt griddle to get it to spread out thin. When top is dry flip it. I just grab the edge with my fingers to flip it. It's difficult to use a spatula. Stack crepes until ready to fill.Melt butter in saucepan on medium high. While it is melting mix together whole wheat flour and milk. Pour on to buttered pan and cook until thick (like a gravy). Keep stirring or it will scorch. When thick add ham, heated broccoli, and the rest of the spices. When heated all the way through, place 1/3 of the filling on a crepe and roll it up. You may want to add cheese in the crepe or on top of it.
