Shred the cabbage and place in a microwave safe bowl with a tbspns water. Microwave for 9 minutes until soft and cooked.In a fry pan, use Pam or extra-virgin olive oil and cook the ground turkey under med-med high heat until cooked through (no pink). Add the tamari and balsamic vinegar, mix and continue to cook 1 minute. Add the cabbage, mix well and simmer 5 to 10 minutes, stirring regularly. Right before taking it away from heat, add the scallion. Cut the core of the iceburg lettuce and make "wraps" with each leaf. Other lettuce varieties may be used but I do prefer the crunch of the iceburg. I serve the ground turkey mixture in a bowl, take a piece of lettuce, place a small amount of turkey mixture on, wrap it up and enjoy!
