Here is how you make Zucchini Hamburger Skillet:

Brown ground beef in skillet, seasoning with salt and chili powder. Drain fat and set aside. Add garlic and zucchini and italian seasoning to skillet and saute for 1 or 2 minutes, until the zucchini is crisp-tender. Return the seasoned ground beef to the skillet with the zucchini and add 1 can of diced tomatoes and tomato juice. Heat through -- approximately 2-3 minutes, but don't overcook the zucchini.
