What Are The Ingredients For Noodle-free Zucchini Lasagna Recipe?The ingredients for Noodle-free Zucchini Lasagna are: Ground beef, lean, 8 ozTomato Sauce, 1 cup Diced Tomatoes w/ Basil Garlic, and Oregano, 1 can Riccotta (10% M.F.), 1 cup Mozzerella Cheese (shredded/part skim), 8 oz Parmesan Cheese, shredded, 1/4 cup Olive Oil, 1 tbsp Garlic, 2 clove Egg, fresh, 1 large Onions, raw, 1 small Zucchini, 3 large, sliced Salt 2 tsp Italian Seasonings - 1 tsp How Do I Make Noodle-free Zucchini Lasagna?Here is how you make Noodle-free Zucchini Lasagna: In a medium sauce pan, brown meat and season with 1 tsp salt. Drain and remove from pan. Add olive oil to the pan and saute garlic and onions till translucent. Return meat to pan, add diced tomatoes, tomato sauce and the remaining salt. Simmer on low for 40 minutes, covered.Slice zucchini lengthwise into 1/8" slices. Salt lightly and set aside for 10 minutes to sweat out moisture. Blot excess moisture off zucchini with paper towels then grill or cook on griddle 1-2 minutes each side. Blot any excess moisture.Stir together Ricotta cheese, parmesan cheese, Italian seasonings, and egg - combining well.Preheat oven to 350 degrees. Begin layering lasagna by putting 1/3 of the sauce on the bottom of a 9X13" cassarole dish, layer 1/2 of the zucchini( as you would noodles). Top the zucchini with 1/2 of the ricotta mixture and then 1/3 of the mozzerella cheese on top of that. Repeat, starting with 1/3 of the sauce, the rest of the zucchini and ricotta, 1/3 of the mozzerella, and then finish by spreading the rest of the sauce and the balance of the mozzerella on top. Cover with foil and bake 45 minutes, then remove foil and bake an addition 15 minutes. Let stand 10 minutes before slicing.
