Here is how you make Parmesan Zucchini:

Preheat the oven to 425 and place the rack as close to the top as possible. Chop the zucchini into cubes - I quarter them lengthwise and then chop them about 3/4 inch thick. Put pieces into a bowl and lightly coat (spray and toss) with the nonfat cooking spray. Add parmesan cheese, garlic and thyme and toss until evenly coated. Add salt and pepper to taste. Spread mixture onto a baking sheet and place into the oven for 15 minutes.
