Here is how you make Black Bean Quesadillas:

In a large skillet over medium heat, cook black beans, tomatoes, cumin and garlic until liquid dissolves, stirring occasionally. Lightly coat griddle with cooking spray and preheat. Place one tortilla on griddle and fill with half of bean mixture, topped with ½ of the cheese. Place another tortilla on top. Cook for 3 to 5 minutes on medium heat, watching carefully so tortillas do not burn. Flip and cook 1 to 2 minutes more. Repeat w/ remaining ingredients. Cut each tortillas in half to make 4 servings.
