Garlic, 2 cloves, sliced
1/2 pint grape tomatoes, halved
1 small yellow onion, sliced thinly
3 sprigs oregano, leaves roughly chopped
Vegetable Base, 1 tsp, mixed with 1/2 cup water
White Wine 1/4 cup
Extra Virgin Olive Oil, 1 tbsp
Swiss Chard, 6 oz, cut into 1" pieces, stems and leaves separated
Slivered Almonds, 2 tbsp
Pacific Cod, 2 fillets

Here is how you make Braised Cod with Swiss Chard, White Beans, and Almonds:

Heat 1 tbsp olive oil over medium heat, add garlic and crushed red pepper. Cook about 1 minute until fragrant. Add swiss chard stems, beans, tomatoes, onion, and oregano and stir to combine. Cook until swiss chard stems and onion are softening, about 5-6 minutes. Add chard leaves and cook another minute until just wilted. Add white wine, stir to combine, and simmer until reduced by hald, about 1 minute. Add vegetable base mixture to pan, increase heat to medium-high and bring to a simmer. Salt & pepper cod on both sides and add to pan. Nestle in vegetables, cover, reduce heat to medium, and cook until opaque and flakes easily, about 6 minutes.While cod is cooking, toast almonds over medium heat.Serve in bowl with toasted almonds on top.Serving Size: Makes 2 large servingsNumber of Servings: 2Recipe submitted by SparkPeople user SPOONGIRLDEB.
