3.5 cups (uncooked ) wide noodles (I prefer to use a whole wheat noodle, but enriched egg noodles will work...calorie info will be different)

1-12oz can chuck light tuna (drained well)

1/2 cup light mayo

1 cup finely chopped raw celery (optional)

1/3 cup finely chopped raw onion (up to a 1/2 cup if you like more)

1/2 tsp. salt (optional, for flavor)

2 tbsp. lemon juice

1-12oz can of Campbell's 98% Fat Free Cream of Celery (you can use regular or Healthy Request...calorie info will be different)

1/2 cup non-fat milk

1.25 cups shredded reduced fat cheese (2% milk fat)

Here is how you make Not Your Mama's Tuna Noodle Casserole:

Cook noodles as directed on package, drain well.In bowl, mix drained tuna, onion, celery, mayo, lemon, and salt.Toss in cooked noodles.In sauce pan, heat condensed soup and milk, then add shredded cheese, stir until melted and well blended.Mix in bowl with noodle mixture.Pour all into an ungreased casserole dish (I use an 8 x 12 Pyrex) . Bake at 425 degrees for 20 minutes. Serves six.I like to serve with peas on the side...and sprinkle with lemon juice to taste.Number of Servings: 6Recipe submitted by SparkPeople user REDHOLLY.
