2 tb butter
2 tb flour
8 oz cheese ( I used a blend of lowfat and full-fat cheeses)
2 cups milk
1 bag mixed vegetables
16 oz pasta, uncooked.


How Do I Make Mac and Cheese?

Here is how you make Mac and Cheese:

Heat a large stockpot of water to a boil. Add vegetables and pasta, cook until pasta is doneWhile water is heating, make a roux of the butter and flour, gradually add 1 c milk to make a thick sauce. Add cheese and stir. Once cheese is melted, gradually add the 2nd cup of milk. Continue stirring - don't let it sit or it will scorch. Once it's smooth, turn down to low heat and stir every couple minutes until pasta/veggies are done. drain pasta/veggies, put in a large bowl, pour sauce over and stir until well mixed.
