1 mango diced, if out of season see freezer section at your grocery store
2 plum tomatoes
1 small red onion
1/2 jalapenos, diced
3 Tbsp, fresh cilantro
2 limes, juiced
salt and pepper
12 oz mahi mahi uncooked
1 tbsp olive oil
12 romaine lettuce leaves


How Do I Make Lindy's Mahi-Mahi Fish Tacos?

Here is how you make Lindy's Mahi-Mahi Fish Tacos:

Combine the mango, tomatoes, jalapeno, cilantro and lime juice in a medium mixing bowl and season with salt and pepper. Season the fish with salt and pepper and brush with olive oil. Grill on george foreman grill roughly 4-6 minutes until just opaque in the center. Set aside to cool. When slightly cool, chop into large chunks. Add to the reserved salsa aand fold carefully as to not break up the fish. Add mixture to the middle of the lettuce leaves and roll.Note: I have found that HEB has a mango salsa which now makes these even simpler! Enjoy.
