This is a Wonderful recipe that came from a fish taco recipe in Eating Well magazine. This is probably awesome in a fish taco, but I didn't have everything I needed for that, so ate it as it is. Rub adobo rub all over fish. Let stand 20 to 30 minutes for the fish to absorb the flavor. Preheat grill/grill pan (I used my George Foreman grill) to medium-high. Oil the grill rack or use a grilling basket on grill, or spray grill pan/GF grill with olive oil spray. Grill the fish until it is cooked through and easily flakes with a fork, 3 to 5 minutes per side. Transfer the fish to a platter.
