Cook pasta as directed. In a saute pan, heat 1 Tbsp olive oil until sizzling. Cook the chopped onion and garlic until translucent but not brown. Add the broccoli and mushrooms and saute until softened, approximately 5 minutes. Remove this vegetable mixture from the pan and keep warm. In the same pan, add the shrimp and cook until pink, approximately 7 minutes. When the shrimp is cooked, add the vegetable mixture back to the pan and simmer for a 2-3 minutes.
