Handful of sun or sem-dried tomatoes
2 cloves garlic
Handful of toasted pine nuts
Feta cheese - 100 grams or so and cubed
2 tbsp Olive Oil

Here is how you make Warm Pumpkin Spinach and Feta Salad:

Heat oil in largish frypan over medium to high heat. Add onions and garlic and sautee till clear. Add tomatoes and pumpkin and sautee a further few minutes. Add feta, pine nuts and half the spinach and stir until spinach wilts. Turn off heat and then add remaining spinach and stir through (this is so that you have some leafy spinach as well as some well cooked spinach in the dish but it doesn't really matter if it all wilts).
