In a large pot, bring 4 quarts salted water to a boil. Add shrimp and cook for 1-2 minutes max. Remove shrimp and place in bowl of ice water to stop cooking.Drain the shrimp. Cut into halves. Place in glass or ceramic bowl. Mix in lime and lemon juice. Cover and refrigerate for 1/2 hour.Mix in the chopped red onion and serrano chile.
