3 tsp salt
1 tsp black pepper
1 tsp cayanne pepper
2 medium onions, chopped
3 cloves garlic, minced
1 c. chopped tomoatoes
3 c. diced potatoes
2 c. diced eggplant
3 c. chick peas, cooked and rinsed
200 gms dried macaroni
4 c water

Here is how you make Veg and Macaroni stew:

Rinse and boil dried chick peas until tender (about 45 minutes). Meanwhile, dice potatoes, eggplant, onions and tomatoes. Mince garlic.In a large cooking pot, heat oil and lightly fry onions till golden. Add minced garlic and fry. Then add tomatoes and all seasoning. Add all the vegetables and mix well so coated with seasoning. Add rinsed and boiled chick peas and 4 cups of water. Heat and simmer for 10 minutes. Add dried macaroni and cook another 10 minutes or until macaroni is tender.This is enough to feed a family with extra helpings.
