* In a bowl, mix the ground almonds and 1 tablespoon of Splenda. * Brush four 4-ounce ramekins with 1 tsp. of melted butter and coat with the nut mixture. Place the ramekins on a sheet tray and keep in the refrigerator. * Preheat the oven to 400 degrees F. * In a medium bowl, using an electric mixer, beat the egg yolks with 3 tablespoons of Splenda until pale and thickened (about 4 minutes). * In the microwave melt (at 30 sec interval) the chocolate, cocoa powder, and 2 tablespoons of butter. Stir until smooth. * Temper the eggs by beating in the chocolate just a tiny bit at a time. The key is to go slow so that the chocolate gently cooks the egg without scrambling it. * In another bowl, and using clean beaters, beat the egg whites, cream of tartar, and salt until soft peaks form. Beat in the remaining 1 tablespoon of Splenda until the eggs reach medium peaks. * Beat 1/4 of the eggs whites into the chocolate mix, and then gently fold in the rest of the egg whites into the chocolate mix using a rubber spatula. * Spoon the batter into the ramekins and, if desired, sprinkle with extra ground almonds (not included in the calories). * Rub your thumb along the inside rim of the ramekins to remove any stray batter and to give the souffle a nice "top hat." * Bake for 15 minutes or until the souffles have risen dramatically and it has a nice crust (the inside will still be nice and gooey).
