2.2 lb (1Kg) chicken breast, skinned, boned, cut in strips

Heat lightly oiled saucepan over high heat. Saute garlic, fresh ginger, curry spice, cinnamon, curry leaves, chilli, and brown mustard seeds until fragrant (about 2 minutes).Reduce to medium heat and add mango puree, stock, lemon juice. Mix well, and add chicken. Bring to a simmer, then cook, covered, 25 minutes until tender.If your mango puree is quite juicy, during the last ten minutes of cooking, uncover to evaporate some of the liquid.Serve with chopped cilantro, over rice (calories for rice not included).
