corriander powder 1/2 tsp

jalapeno pepper sliced (half)

Here is how you make Bengan Gosht(meat with eggplant):

wash and peel the eggplant, cut it into chunks and microwave it in a microwave safe bowl with lid for about 10 minutes. then just soften it a bit with a fork.heat oil in a pressure cooker, add onions, cook till its golden brown in color. add garlic, fry for another minute.add meat, ginger and whole garam masala, fry till the juice are no longer pink and meat is golden brown in color. add tomatoes, salt, red chilli powder, turmeric powder and corriander powder, cook till tomatoes are soft and oil comes to the surface..about 10 mins.add water, cover the pressure cooker and cook on medium high heat till the weight start shaking...decrease the heat to medium and let it pressure cook for 20-25 minutes. depending on the meat. Remove cooker from heat, let the steam escape, the water should be absorbed and meat should be tender at this point. otherwise cook on high so the water evaporates and oil comes to surface. add the eggplant and jalapeno peppers, mix and cook for about 3 minutes on medium-high heat, then lower down the heat to low, cover the cooker and let it cook in its steam for about 15 minutes. sprinkle cilantro on top. serve hot with steamed rice or naan bread.
