1tsp.Corn Flour(Corn Starch)
1tbsp.Milk
FILLING
2tbsps.Finely chopped Shallots(Red Onions)
1large Mushroom
0.25 Sweet Yellow Bell Pepper
0.25 Ripe Tomato
5 leaves of Fresh Spinach
5 Sprigs Fresh Parsley
5 Sprigs Fresh Coriander(Cilantro)
2 hot Green Chillies
Dash of Curry Powder(Everest Brand Kitchen King Masala)
Dash of Turmeric Powder
Dash of Black Pepper
Salt to taste
1tsp.Unsalted Butter


How Do I Make Egg White and Vegetable Omelette?

Here is how you make Egg White and Vegetable Omelette:

PREPARATIONFinely mince all the Vegetables keeping the Shallots and Tomatoes separate from the rest.In a blender,blend the Egg Whites,Milk and Corn Flour till smooth.METHODIn a Non-Stick Frying Pan melt the Butter on Low flame.Add the Shallots and saute till transclucent and soft.Add the Tomatoes and saute further till the Tomato juice dries up and the Tomatoes turn soft and pulpy.Add the other finely chopped Vegetables and mix well.Sprinkle in Salt to taste,Curry,Turmeric and the Black Pepper Powders.Stir fry till slightly soft.Remove from Pan into a dish.Pour in the blended Egg White+Corn Flour+Milk mixture into the same Frying Pan.Lay the Vegetables evenly across half of the Egg Mixture---leaving the other half free.Cover and cook on Low flame till Omelette is set well.Gently fold the empty half over the Vegetable layered half to form an envelope.Slide on to a warmed plate and serve hot with the Multigrain Bread Roll and beverage of your preference----or combine it with a bowl of Soup for a light Lunch or Dinner. This ensures a serving of Vegetables with your meal.TIPSIf so desired add Cheese,Chicken or Bacon while Sauteeing the Vegetables for a variation in taste and flavour.Do not use Butter if Bacon has it's own Fat.I use absolutely Fat Free Bacon so need the Butter.Number of Servings: 1Recipe submitted by SparkPeople user KOMAL53.
