1 Small Eggplant (about 12-14 oz.) peeled & cut into 1/4 in. slices.
3/4 lb. ground turkey (beef or lamb)
1/2 c chopped onion
1 clove garlic, minced
1 c. tomato sauce
1 TBSP butter (margerine)
4 tsp. all purpose flour
1/4 tsp. salt
dash pepper
3/4 c. skim milk
nonstick spray
3 TBSP grated romano (parmesan) cheese

Here is how you make Eggplant Bake:

1. The original recipe calls for cooking eggplant slices in 1/2 in boiling water in covered skillet for 6 min/til tender & drain; but this makes a really soggy bake. I say skip this step.2. Cook ground meat, onion & garlic til meat is browned. Drain off fat. Stir in tomato sauce, bring to boil; then reduce heat & simmer 5 + min. til thickened. Remove from heat; set aside.3. Prepare topping sauce/rue in a small saucepan, melt butter; then stir in flour salt & pepper. Stir in skim milk. Cook til thickened. Remove from heat & set aside.4. Spray 8*8*2in pan w/ non-stick spray. Arrange half of eggplant on bottom of dish. Spoon meat sauce over, then top with remaining eggplant slices. Pour topping sauce/rue over top of eggplant & sprinkle with cheese. 5. Bake uncovered in 325 F oven for 30 min. or til hot & golden.
