What Are The Ingredients For Tuscan Bean Stew Recipe?The ingredients for Tuscan Bean Stew are: ~2 tablespoons oil (olive is in nutritional info, but I used safflower oil)~4 slices bacon, chopped ~1 lb smoked sausage or kielbasa. sliced into 1/2-inch slices ~1 large onion, chopped medium ~2 celery ribs, diced into 1/2 inch pieces ~1 cup carrots, diced into 1/2 inch pieces ~8 cloves of garlic, smashed or put through a garlic press ~2 bay leaves ~2 tablespoons fresh thyme (optional) ~1 teaspoon dried oregano ~1 teaspoon black pepper ~1/2 teaspoon dried red pepper flakes (optional) ~2 cups dry cannellini beans, soaked in brine (or 2 cans cooked cannellini beans, drained and rinsed) ~1/2 cup white wine (I used Chardonney) ~3 and 1/2 cups water ~3 cups chicken broth ~2 cans diced tomatoes, drained well ~1 cup spinach (or any greens like kale, chard, collards, etc.). chopped ~1/4 cup cornstarch How Do I Make Tuscan Bean Stew?Here is how you make Tuscan Bean Stew: 1. In a large Dutch oven, heat oil over medium heat. Add bacon and sausage and cook until bacon is rendered, about 6 to 10 minutes.2. Add onions, carrots and celery and continue to cook until vegetables are tender, about 10 to 15 minutes. 3. Add garlic, black pepper, red pepper, oregano and thyme, stir and cook for about 1 minute.4. Add wine, water, chicken broth, bay leaves and beans. Stir well to combine and bring to a simmer.5. Cover Dutch over and place in oven. Cook for 45 minutes to one hour. 6. Remove from oven and add diced tomatoes and chopped greens. Make sure the stew is simmering and return to oven for 30 minutes. 7. Remove from oven, and take a cup of the beans and broth and puree with the cornstarch. Return mixture to stew and let come to a low boil to thicken. 8. Turn burner off and let stew sit. covered, for ten minutes before serving.
