1 package dried beans (white, red or cranberry)
My preference is Romano cranberry beans as they hold up well and the skin is not tough like red beans. For me white beans fell apart too quickly and turned to mush.
12 fresh sage leaves
I tried dry sage and the flavor just wasn't the same.
1 tsp coarse sea salt (to taste)
black pepper to taste
2 tbs extra virgin olive oil


How Do I Make Tuscan Beans?

Here is how you make Tuscan Beans:

Start the night before by washing and sorting the dry beans.Fill a pot with three times more water than beans and bring to a boil. Turn off burner and allow to soak overnight. In the morning if desired rinse the beans or for a thicker consistency don't rinse and add enough water to cover the beans by one inch add 12 fresh sage leaves and 1 tbs of olive oil. Bring to a boil and boil uncovered for one hour. Stir occasionally to keep from sticking. You may need to add water periodically. Serve immediately or allow to cool or refridgerate.
