What Are The Ingredients For Marilyn's Focaccia Bread Recipe?The ingredients for Marilyn's Focaccia Bread are: 2 envelopes (or 4.5 tsp) fast-rising yeast2 cups tepid water (110 degrees) 2 Tbsp. sugar or honey 4 Tbsp. olive oil 1/2 cup vegetable oil 1 tsp. salt 5.5 cups unbleached white flour (whole wheat does not work well) Topping: Olive Oil Kosher Salt or coarse Sea Salt seasonings, such as garlic, rosemary, herbs de provence How Do I Make Marilyn's Focaccia Bread?Here is how you make Marilyn's Focaccia Bread: Dissolve yeast in the tepid water and let it rest a few minutes while you gather the other items.Add sugar, 4 T. olive oil, 1/2 c. vegetable oil and 1 t. salt. Thoroughly mix in 3 cups of the flour. This can be done by hand or with a mixer. If using a mixer, look for the dough to pull away from the sides of the bowl. You may add some seasonings at this point if you prefer them in the bread (we do).If using a mixer, use the dough hook. Add approximately 2.5 cups of flour. The dough will be soft and should not be sticky or dry. Allow the dough to rise twice, punching it down each time. Oil two cake pans (for uniform loaves) or two baking sheets (for rustic loaves). Divide the dough into 2 loaves and place one in each pan/sheet. Allow the bread to rise again, approximately 30 minutes to 1 hour.Using your fingers, gently press holes in each loaf. Sprinkle olive oil and seasoning (except coarse salt). Heat oven to 375 degrees and let bread rest.Sprinkle with coarse salt immediately before placing in oven. Bake until the top is brown, approximately 30 minutes. It should be hollow sounding. The bread will have a crisp crust and soft inside.This recipe is very forgiving. I have let it rise all day and I have rushed it into 3 hours.
