1 23.5 oz jar Fit and Active Traditional Pasta Sauce
4 cups fresh spinach, chopped
4 cloves garlic, minced
1/2 medium onion, diced
1 bunch broccoli, diced
10 Cherry tomatoes, halved
1 cup 1% fat Cottage Cheese
1/2c Parmesan Regiano
I egg

To taste:
Salt
Black Pepper
Oregano
Basil
Garlic Powder
Onion Powder
Red Pepper
Rosemary

Here is how you make Lasagna-esque Rotini casserole:

Preheat oven to 350. Boil water for pasta.Put a large skillet on medium heat.Place 3 cherry tomatoes and a handful of spinach into the pan. ( optional: use a spray of oil. In this case, I did not use oil and simply let the tomatoes and spinach reduce enough to lubricate the pan so i didn't have to waste calories on oil. If you choose to use oil, please don't forget to adjust in your calorie count!)Place garlic and onion into the pan and allow to cook until fragrant.Add in spices as desired.Add pasta to boiling water.Place broccoli into skillet with garlic and onions, allow to cook for 3 minutes, stirring often.Pour jar of pasta sauce into skillet and stir to coat.Turn down heat to medium low and allow pasta sauce to 'mingle' with the veggies.Mix cottage cheese with 1/4 c parmesan and 1 egg in a seperate container. ( optional, season this mixture with 1/4 tsp nutmeg)When Pasta is cooked, drain and return to pot.Taste pasta sauce as a seasoning check. Add as needed.In 9X13 casserole dish, pour a thin layer of sauce. Add a thin layer of spinach.Add 1/2 pasta.Add 1/2 cottage cheese, egg mixPour 1/2 pasta sauce over the topRepeat, ending with pasta sauce.Sprinkle 1/4 parmesan over top, add more spices as desired.Crumble 1 oz reduced fat feta and place over top of dish. Add any remaining spinach and rest of cherry tomatoes.Cover, bake in 350 oven for 25 minutes.Now you can do 1 of 3 things:Remove from oven and allow to sit 10 minutes before uncovering and serving.Uncover, place back into oven and broil on high for 2 minutes ( feta now bubbles and top layer gets a little crusty)Place 1 cup shredded cheese on top, return to oven, broil on HI 2 to 3 minutes or until bubbly and golden brown in a 9X13 casserole dish
