1 large onion, large chop
1 red bell pepper, large chop
1 8oz package sliced mushrooms
1 Tbls minced or chopped garlic
28 oz can Tomato Puree
26 oz jar Organic Marinara Sauce
1 13.25 oz box Barilla whole grain medium shells (or other shape)
16 oz. whole milk mozzarella, shredded


How Do I Make Easy Easy pasta casserole?

Here is how you make Easy Easy pasta casserole:

Brown the turkey: Spray a large hot skillet with nonstick spray, squeeze in the turkey from the casing (or chop each link into 6 pieces for a more "meatball" feel). Brown lightly. Remove to a small bowl.Brown the Vegetables: Add chopped onion and red pepper to the hot skillet (sprayed again) and stir to brown lightly. Add mushrooms and garlic to the peppers and onions and stir until softened. Remove from heat.Layer: In a 13"x9" pan, put a 1/2 c. tomato puree in the bottom and spread lightly. Dump in the box of pasta (DRY, not precooked) and spread evenly. Layer in the vegetables, spreading evenly. Top with sausage, spreading evenly. Pour remaining puree over all. Spread Marinara sauce over all. Rinse out the jar or tomato can with 1/2 c water, and pour over everything.Bake: Cover with aluminum foil and bake at 350 degrees for 20 minutes. Remove from oven, remove cover, spread cheese evenly. Bake again, uncovered, for 20 - 30 minutes or until cheese is browned. Pasta size will affect cooking time but it should be OK after it sits to cool. I used small shells.Can reduce calories by using half as much cheese or a part skim mozzarella (the Kraft part skim and my whole milk were the same calories). Sneak in more vegetables by adding shredded carrots or spinach with the mushrooms.Serves 12 and freezes well.
