Finely dice onion, bell pepper, garlic, squash. Stem and tear spinach into pieces. Saute all veggies in a sprinkle of olive oil, 5 mins or until softened. Add undrained diced tomatoes, tomato sauce, water, spices and noodles. Bring to a boil, stir occasionally. Reduce heat, cover and simmer 15 to 20 minutes til noodles are soft. Add cottage & Parmesan cheeses and cook 5 more minutes. Garnish with shredded cheese, add salt and pepper to taste.
