I stuck with salt,pepper,garlic powder, dried basil, and dried oregano]Dip in egg wash, let excess drip offDip in Panko, press down to make sure coating sticksHeat about 1/4 inch of vegetable [or any oil you choose] in a large skillet to medium (6 on my stove)Once oil is warm/hot add eggplant pieces. Let cook about 5-6 minutes per side [judge the done-ness based on the brown color, adjust to your liking]Cook pasta to directions on the box.Heat the sauce in a pan, you can add more herbs to the sauce if you'd like. ***IF YOU WANT TO ADD CHEESE, THIS IS HOW I DID IT FOR MY FAMILY (I dont eat cheese, but they do)***Heat the oven to 400*F. On a wire rack, over a cookie sheet, layer the eggplant pieces. Sprinkle with mozz cheese, and cook for ~5 minutes or until cheese is melted. Then add sauce once ready to eat.
