Heat oven to 350F. Brown beef and drain. Prepare noodles as box instructions. Add pasta sauce and diced tomatoes; simmer for 10 min. In a seperate bowl stir cottage cheese, spinach (thawed), parmesan cheese, half the mozzarella eggs (beaten), and salt and pepper. Layer 1/4 meat sauce, noodles, 1/4 meat sauce, 1/2 cheese mixture, noodles and repeat. after all noodles are used top with remaining meat sauce and remaining mozzarella cheese. Cover with foil.
