4 oz. (1 cup grated) reduced-fat Swiss cheese

Here is how you make Cheese-and-Chicken Shells:

Advanced Prep: Cook chicken and shred for a total of 1 cup. Cook pasta shells. Rinse in cold water. Grate mozzarella and swiss cheeses. Grate carrots.Preparation: Combine the egg, cottage cheese, chicken, mozzarella, carrot, garlic, salt and pepper in a mixing bowl and stir together. Spoon the mixture into the pasta shells. Combine the milk and cornstarch (2 T.) in a saucepan; cook untll thickened and bubbly. Add the swiss cheese and nutmeg, and stir until cheese is melted. Arrange the stuffed shells in a freezer-proof baking pan. Spoon the sauce evenly over the shells. Wrap the pan with foil. Label it and freeze.To serve: Thaw the chicken mixture in the refrigerator at least 24 hours in advance. Preheat the oven to 350.
