2 Boneless Skinless Chicken Breasts, sliced into strips
1 each: large red, yellow and green bell pepper, sliced into thin strips
3 cloves garlic (we like garlic)
1 can tomato paste
1/2 cup red wine (or water or chicken broth)
1/2 cup + water (or chicken broth)
Basil (prefer fresh but can use dried)
Salt and Pepper to taste


How Do I Make Italian Bell Pepper Chicken?

Here is how you make Italian Bell Pepper Chicken:

Makes 3-4 serving, depending on size of chicken breasts.Spray a nonstick pan with cooking spray. Over med. heat, add chicken. Saute for 5 mins, until lightly browned on all sides. Add bell peppers and garlic and saute for just a minute to release some of the garlic flavor. Add the tomato paste, wine, and water (you may need more water throughout the cooking process.) Stir all together to incorporate paste, wine and water. If you are using dried basil, add 2 tsp. now. You want the consistency of the sauce to be a watery spaghetti sauce. Cover and cook on low-med heat (high simmer) for 20 - 30 mins, until the peppers are soft and the chicken is cooked through. You may need to add more water as you cook - you want the final consistency to be like spaghetti sauce. Salt and pepper to taste.If you are using fresh basil, add now ( 2 oz package would be good.)Serve alone, over mashed potatoes (favorite) or whole wheat pasta.
