Heat up the olive oil in a pan and saut? onion, garlic and mushrooms. Add seasoned chicken and the remaining ingredients except the cooking Sherry. Cover and simmer for 15 minutes. After 15 minutes add the cooking Sherry and cover again for another 15-20 minutes. Uncover and cook until sauce is reduced to desired consistency and remove bay leaves. According to my mom, you can put it all in the crock pot for 6 hours on low, including the sherry from the start. To crock pot, the chicken breasts should be frozen. I don?t know if I would saut? the onions, garlic or mushrooms if I?m going to put it in the crock pot. Whatever you think is best. **OPTIONS: This is great over whole wheat pasta?angel hair is my favorite with this recipe. Orzo is another idea instead of pasta. Toss a salad and you are good to go.
