1.5 lb chicken breast, cubed
1/2 cup parmesan cheese, grated
1 green bell pepper, diced
1 cup thinly sliced carrots
juice of one lemon (zest too if you like)
2-4 tsp Mrs.Dash garlic and herb seasoning blend
salt to taste
red pepper flakes to taste
6 slices pepperoni (1/8 inch thick- hormel presliced works great)
1 tb olive oil
pam spray if needed
4 cups cooked rice


How Do I Make Skillet Italian Chicken?

Here is how you make Skillet Italian Chicken:

in a bowl, mix the seasonings (you can add the salt and chili flakes later if needed, but throw a bit of each in now), the lemon juice and the cubed chicken. Let sit while you deal with the rest of the meal. Pour the olive oil into a saute pan, heat to medium high. Add the veggies, saute until just barely heated through (you'll be adding them back to the pan in a bit). Remove from pan. Return pan to heat- you MUST watch this step carefully! Dice up the pepperoni finely (smaller means more distribution- tricks you into thinking theres more than 6 slices), then sprinkle in the hot pan. Stir over medium high heat until sizzly and slightly crispy. This step is almost more important than watching the pepperoni! Tilt the pan, using a spoon or spatula, scrap the pepperoni bits towards the high side of the pan. Allow fat to drain away from the pepperoni, but not out of the pan. Scrape the pepperoni into the bowl with the veggies. Return pan to heat yet again, with the pepperoni fat still in it. This sounds like a horrible idea, but its delicious and the recipe already accounts for the fat. Add your chicken, in batches, unless you have a huge pan, to the pan and brown, transferring as needed to the veggie bowl. When all the chicken has been browned, return everything to the pan, cook until chicken is cooked through and veggies are as done as you like. Check seasonings and adjust as needed.
