1 lb boneless, skinless chicken breast, (about two good sized breasts sliced in half long-ways to make 4 servings), pounded to 1/4 inch if necessary

1/4 cup (2 oz) Parmesan cheese (buy this hard from your deli and grate or shred yourself)

4 Mozzarella slices, thin-sliced from your deli

1/2 cup tomato sauce

1 clove garlic, minced (or 1 tsp jarred minced, not dried)

2 tsp Italian seasoning

1/2 cup seasoned bread crumbs

2 egg whites, beaten

salt and pepper to taste


How Do I Make Low-Cal Chicken Parmesan?

Here is how you make Low-Cal Chicken Parmesan:

Preheat oven to 375 degrees.Lightly salt and pepper both sides of chicken breasts. Set aside.Lightly beat 2 egg whites in a shallow dish. In a separate dish, pour half the bread crumbs.Dip breasts into egg then press into crumbs, lightly coating top side with more crumbs. Repeat for each breast. Set aside.In a pan, heat 2 tsp olive oil over medium-high heat and add garlic, saute for 2-3 minutes or until garlic becomes fragrant and caramelized (do not let garlic turn dark brown). Add tomato sauce and Italian seasoning, reduce to medium heat and cook till sauce is heated through, salt and pepper to taste. Remove from heat and set aside. Place breasts on cookie sheet two-inches apart. Spoon on tomato sauce mixture, evenly dividing between the 4 breasts.Place 1 slice of mozzarella on each breast.Sprinkle on Parmesan, evenly dividing between the breasts. Place in preheated oven for 20 minutes or until breasts are 165 degrees and juices run clear. If more browning is desired, place under broiler, watching carefully until desired color is achieved.
