1/2 tsp freshly ground black pepper plus 1 tsp
1/4 cup olive oil
1 red bell pepper sliced
1 yellow pepper sliced
3 ounces prociutto chopped
1 15-oz can diced tomatoes
1/2 cup white wine
1 tbs fresh thyme leaves
1 tsp fresh oregano leaves
1/2 cup chicken stock
2 tbs capers
1/4 cup chopped fresh parsley

Here is how you make Roman Chicken:

-season chicken with 1/2 tsp salt and 1/2 tsp pepper-heat olive oil in skillet over medium heat-cook chicken in oil until browned on both sides then remove and set aside-add peppers and prosciutto to the same pan and cook until peppers are browned and proscutto is crisp (about 5 min)-add garlic and cook for 1 min-add tomatoes, wine, and herbs, scraping the browned bits off the bottom of the pan with a wooden spoon-return chicken to the pan and add broth-bring to a boil then reduce heat and simmer, covered, until chicken is cooked through 20-30 min-add capers and parsley, stir to combine and server(if making ahead of time, reheat before serving and then stir in capers and parsley before serving)Serving Size: makes 6 servingsNumber of Servings: 6Recipe submitted by SparkPeople user ENAJJAR.
