1. Preheat oven to 350 degrees. Spray a baking dish lightly with cooking spray and set aside.2. Place chicken between two sheets of plastic wrap, and pound until about 1/4" thick. Repeat with remaining chicken breasts.2. In a bowl, combine Parmesan cheese, mozzarella cheese, and cream cheese with Italian seasoning and chives; Mix well. Evenly apply cheese mixture to each breast and top with red pepper strips. Tightly roll chicken. 3. Pour the lemon juice and bread crumbs into two seperate bowls. Carefully pick up a chicken roll, coat with lemon juice and lightly coat with bread crumbs. Repeat until all breasts are coated. Place in prepared baking dish. Season with salt and pepper and spray lightly with cooking spray.4. Bake for 30 - 35 minutes, or until cooked through. 5. Remove chicken from oven and spray lightly with cooking spray.
