This is a family recipe that my mom used to make growing up. It is easy, doesn't require much time or boiling the noodles. I have made it into a healthier version, so that our family can enjoy it, also. I hope you enjoy it!

The ingredients for Easy Peasy Lasagna are:

1 cup cottage cheese
1 cup grated mozzarella cheese + 1/3 c. more for topping
1 large egg
1/2-2/3 jar Spaghetti Sauce (I used Ragu Chunky)
1/3-1/2 cup water
salt and pepper to taste
8-9 uncooked lasagna noodles (I used whole grain)
1 cup Rotisserie style chicken, cubed


How Do I Make Easy Peasy Lasagna?

Here is how you make Easy Peasy Lasagna:

1. Mix cottage cheese, 1 cup of mozzarella cheese and egg together in a medium sized bowl. Set aside.2. Mix Spaghetti Sauce, water and salt and pepper together. 3. Place several tablespoons of Sauce mixture in the bottom of a 9x13 baking dish (I use glass, simply because it is easy to clean and doesn't burn the bottom). 4. Place 3 noodles length-wise in the pan. Fill in the remaining space at the end of those noodles with another noodle or pieces of noodles. 5. Spread several more tablespoons of sauce mixture on top of the noodles, until they are generally nicely covered.6. Add about 1/2 of the cottage cheese mixture on top of the sauce.7. Spread about 1/2 the chicken over the sauce.8. Repeat steps 4-7 once9. Add one more layer of noodles, using the same method as step 4.10. Spread last of the sauce over top layer of noodles.11. Add the last 1/3 cup of mozzarella on top.12. Cover with tin foil and bake at 350* F for one hour, or until noodles are soft when a fork is inserted in them.
