Here is how you make Fritatta:

Preheat oven to 350. Cook spinach in cast iron frying pan over medium heat in the olive oil until all visible water is consumed, add onions, cook until translucent. Add tomatoes. Add Honey baked (or any ham)Cook until tomato liquid partially evaporated. Turn off heat on skillet. Beat or blend eggs with sour cream. Add salt and pepper if desired. Pour mixture into pan with spinach mixture. Put into oven. Cook until top is lightly browned. Add grated cheese, return to oven. Cook until cheese melted and eggs are firm.
