Here is how you make American-Italian all'Amatriciana:

Bring a large pot of water to a boil for the pasta. Salt the water, add the pasta, and cook to al dente.While the pasta water is heating up, heat the EVOO in a deep skillet over medium-high heat. Add the bacon and crisp for 4-5 minutes, then add the onions and garlic and cook to soften, 5-6 minutes. Stir in the stock, then the tomatoes, and season with pepper to taste.
